What's for Dinner? Stuffed Tomatoes, Braised Fennel, Cod Fillet, Sweet Potato Crisps

Stuffed Tomatoes: Market tomatoes loaded with a pan-fried mixture of sweet canned corn, cous-cous, roasted red peppers (homemade) and fresh parsley. Topped with semi-soft goat cheese and then roasted in the oven.

Braised Fennel in olive oil and butter and stock until meltingly soft!

Cod fillets cooked with fennel greens for extra flavour!

Sweet Potatoes made spicy with cayenne pepper and a lil' dash of curry powder then toasted in the oven.
