Class Treats: Dark Chocolate Cupcakes with Chocolate Ganache and Milk-Chocolate whipped Cream

On our second last day of class in summer school I figured triple chocolate cupcakes would be suiting. Grade 11 Biology review... and CHOCOLATE!
Both are indulgent. (I don't plan on becoming a surgeon, or a botanist, but I love the subject, so I took it over the summer to have in under my belt.)
Darwin's theory of evolution...and CHOCOLATE
Meosis....and CHOCOLATE
The Mammalian heart structure... and _______!!

Lots of fun using my new chef's pastry bag.
I can't wait to make profiteroles with the spcial attachment!!

  1. Claire,

I just wanted to let you know how inspiring and impressive this all is! I've been looking at your blog every few days since you posted it to fb a few weeks ago.
You seem like an absolute cooking genius to me, especially considering your age!
Keep it up, I always like reading it and then having the overwhelming need to cook something!
    Hoby hugs, Maggie

  2. Awe! Thanks Maggie! :)
I really appreciate it. That means the world to me!
Cooking/baking sure is fun! It's definitely my creative outlet. And, it NEVER gets old because there are always new ingredients/methods to test.
Thanks for reading. Glad to know all of this isn't for nothing :D

  3. Hey Claire great blog! Really nice layout, graphics and not too much reading just what I like :) I was wondering if I could maybe try to make this? What's the recipe? Thanks

  4. Hey Will!
    Thanks so much!
Here's the thing... I rarely use recipes, just cause I'm lazy that way, and when things turn out good when I figure them out on my own, it's more rewarding :)
I'll tell you what I did.
Take a German chocolate cake recipe and use dark chocolate instead of milk chocolate. (Just make the cake part). And use a 1/2 cup of cocoa powder in place of 1/2 cup of the flour.
Bake the cake mixture in cupcake molds and once they have cooled spread the following on top (ganach: 1/2 bar of 80% dark chocolate, 2 tbs corn syrup, 1/4 cup of 35% cream. Let this cool before spreading)
Then make frosting. (Melted chocolate, 1 egg white and a hell of a lot of icing sugar [like 2 cups] and whip everything until it looks like icing. Add more icing sugar or milk if necessary. Use a piping bag to make everything pretty.)

I took you for more as the wild-hunter-fisher-gatherer type. LOL, But what do I know!?

  5. I see I guess when I cook (my cooking is very unique) I just throw stuff together too. But thanks for the recipe I will definitely try it out some time in the near future :)

I do like fishing a lot though. I also like making Kenyan food. And I barbecue but I'm starting to become a bit of a finer cook.
