The 1st 100-Mile Meal

A mini potato quiche. Local eggs, cheese, potatoes, onions and my favourite - my nono's homemade capicola. It's a traditional dry-cured shoulder or neck of pork. (Looks like a hanging log of salami).  Nono even killed the pig I'm quite certain... I cut the meat into little pieces and fried them to extract the oil instead of using butter to grease the pan. I'll have to be innovative when it comes to oils and butters until I get my hands on some locally made butter.
Simple. But I think it's a solid start to the challenge!
