A Little Taste of Summer in Winter

Thanks to the hot-houses in our region, I was able to enjoy a surprisingly summery meal in the dead-cold of winter. Mom found out at the fish counter that there is actually a variety of trout that grows in a fish farm just an hour North of here. I stuffed the fish with cream cheese, lemon balm and herbs and pan-fried it for a crispy skin. Waxy, buttery potatoes on the side with a fresh little salad and some green-house tomatoes. And a little spelt cracker with a 'cutsie' topping on the side as an experiment in my on-going quest to make the perfect cracker . Woohoo for the 100-mile diet!
