Dinner in a Flash

A scrumptious little dinner soup that took no time to make! Just sauté 2 onions, celery, and carrot (mirepoix),  then cover with home-made chicken broth. Add in whatever chopped veg you fancy. I used zucchini we had frozen from the summer, corn, savoy cabbage and leftover chicken. Flavoured with fennel seed, bay leaves and as usual, salt and pepper. 20 minutes, tops!
