Curried Lentil and Apple Salad with Chicken

I always have pre-soaked and cooked lentils kicking around the fridge, waiting to be thrown into salads and stews. Getting into this routine - cooking off lentils/chickpeas/rice/etc on weekends and storing it in the fridge - makes preparing week night meals really darn easy. In a medium skillet, heat a few spoons of olive oil, turmeric, curry powder, cayenne pepper, paprika, nutmeg, and some sugar or stevia. Fry onions until they lose their sharpness, but still have a crunch. Take off the heat and let cool as you make the rest. (Some recipes don't ask you to toast the spices, but this way requires just 8 minutes and is undiscriminating over the quality of spices you use. Uncooked heavy spiced dressings have a tendency to become powdery or gritty. This way you cook everything into a fail-proof oil-paste).


Using your mandolin, or chef-y knife skills, finely slice apple, fennel, and cucumber. Choose the amounts based on how sweet/licorice-y/or fresh you want the balance to be. You'll notice that I never use measurements on this blog... you're never going to experiment (and learn!) if I spoon feed you cups and grams of conformity. Anyways, throw the spiced oil and onions in with the veggies and fruit. Add some apple cider vinegar. Toss around until everything is glossy. Add a few spoons of yogurt or creme fraiche, chopped parsley or cilantro, salt and pepper. Keep adjusting the sweet/salty/sour factors and until you're happy. Pan-fry some chicken using the same spice-theme, but with lots of garlic this time! I don't eat a lot of meat these days, but when I do I go for richer cuts like thigh, belly, or shoulder. Don't overcook your meat. Let it rest. Slice it thinly across the grain. Pile onto your lovely salad and enjoy.

  2. This really looks delicious. Sounds interesting chicken with apple. I am sure it will taste good. I love apple and chicken curry but i have never tried apple and chicken salad. This recipe is good . Thinking to try it.
